“Yummylicious” Chocolate Cookies
My dear Hubbylicious works away from
home for 3 months at a time and he sent me this recipe to make when he comes
home. Since then, I make him 3 dozen to
take with every time he goes. It’s his
little bit of home that he takes with him.
Crunchy on the edges and chewy on the
inside, they will be a mouth-watering contribution to any household.
You are going to need:
1 Cup (250 ml) Softened Butter
1 Cup (250 ml) White Sugar
1 Cup (250 ml) Brown Sugar
2 Eggs
2 tsp (10 ml) Vanilla Essence
1 tsp (5 ml) Bicarbonate of Soda
2 tsp (10 ml) Hot Water
½ tsp (2.5 ml) Salt
3 Cups (750 ml) Flour
1 Cup (250 ml) Chocolate Chips
Preheat the oven to 180°C. Take a baking tray and line with wax
paper. I use the same piece of wax paper
to bake the whole batch….waste not, want notJ.
In a large bowl, cream (mix) the
butter, white and brown sugar together.
Beat the eggs into the mix, one at a time. Add vanilla essence. Dissolve the Bicarbonate of Soda in the hot
water and add it to the mix along with the salt. Add the flour and chocolate chips. Mix well.
The cookie dough will go into a crumbly consistency, but not to worry. This is where it gets fun. Take your hands…..YES YOUR HANDS (It’s very therapeutic you know!!).....grab chunks of
dough, roll it into balls and place them on your prepared baking tray. Do not flatten the balls, this ensures the
chewy centre. Bake in the oven for 10
minutes or when edges are brown.
HINTS AND TIPS:
· Go crazy!!! Don’t let the standard recipe hold
you back. Add a cup of nuts if you want,
or coconut? Or BOTH!!! I have even added
half a cup of oats on one or two occasions or sunflower seeds, yum!!
· The
bigger the dough balls you make the bigger the cookie. I make GIANT ones and serve it with a dollop
of ice-cream for dessert. Or tiny little
mini bites that are great when having a cup of coffee or tea with your
girlfriend or for your kiddies lunchbox.
·
This
recipe makes approx 5 dozen cookies (depending on the size)
· MOST IMPORTANT TIP: Give some away to somebody, ANYBODY. Colleagues at work, family, one cling wrapped
cookie with a ribbon to your friends. You
will not regret it J
